This Bourgogne emanates from a sincere dialogue with nature. Without added sulphites and without compromise, it has a deep and shimmering color. The nose gives off notes of black fruits embellished with aromas of spices, which are found on the palate where the fruit is fleshy and smooth, carried by ripe tannins.

Finesse and clarity signify the beautiful tension of this wine which has nothing to hide. It goes wonderfully with a cold meats board, grilled pork chops or Charolais cheese. Its aromatic richness will also resonate very well with a Tiramisu.

Derrière Sazenay is a climat of the Côte Chalonnaise, on which our plot of 1.2 ha is located, facing south-west. Its vines, 100% Pinot Noir, are 50 years old on average and thrive on hard limestone soil with chailles, small rounded siliceous pebbles.
The vines are harvested manually, and we use a whole cluster winemaking method (up to 40% of whole bunches) which means that the grape is not separated from its stalk, giving wine a greater structure. The pressing process lasts between 13 and 14 days, during which takes place between 4 and 6 grape stomping and some remontages. The 100% natural fermentation takes place using indigenous yeasts from our terroirs. Aging, in underground cellars, lasts arount 7 months. It is made in French oak barrels, 25% of which are new, from 4 complementary coopers.
The low level of rains and a very hot summer gave grapes a magnificent maturity in limited volumes for this 2019 vintage, profiling a generous, gourmand and sunny wine.
