This 1er Cru red wine comes from our 1.7 ha plot on the Climat Les Vasées, facing south-east. It takes its name from the curved, hallway shape of the soil, resulting from water erosion. The soil is marly, deep, not very calcareous, with small pebbles with a diameter of about 5 cm. It is home to vines of around 40 years old, 100% Pinot Noir, maturing early - typical of the area. This gives wines that are generally powerful and a little belated in their development.

WINE FROM ORGANIC FARMING - CERTIFIED BY ECOCERT
On a discreet mineral structure, this 1er cru Les Vasées is dense, with an aromatic power of black fruits coated with woody notes, in a garnet color. Its silky and elegant tannins mark a lasting finish. This wine is appreciated in its prime but can age beautifully. It will accompany “œufs en meurette” or calf sweetbreads. And so you don’t have to choose between cheese and dessert, it goes perfectly with a brie de Meaux with truffle and a tart Tatin.

The vines are harvested manually, and we use a whole cluster winemaking method (up to 40% of whole bunches) which means that the grape is not separated from its stalk, giving wine a greater structure. The pressing process lasts between 13 and 14 days, during which takes place between 4 and 6 grape stomping and some remontages. The 100% natural fermentation takes place using indigenous yeasts from our terroirs. Aging, in underground cellars, lasts between 12 and 13 months. It is made in French oak barrels, 25% of which are new, from 4 complementary coopers.
